Grandpa Head's Baked Beans

Instructions for the Ninja Foodi; if using the oven, cover and bake at 375F.

Time: 8+ hours; plan ahead!

Ingredients

1 lb. navy beans, dry
1 tsp baking soda
Water

4 slices bacon
1/2 c chopped red onion

1/4 c light brown sugar
1/8 c molasses
1/2 tsp dry mustard
2 tbsp apple cider vinegar
1 bay leaf
1 tbsp Worcestershire sauce
3 c water
salt to taste

1. Place beans in a pot, add baking soda and beans. Bring to a boil and boil for 10 minutes. Remove from heat and cover with lid. Let beans soak for 2 hours (or overnight).

2. Using the Sear/Sautee feature on the Ninja Foodi, cook the chopped bacon with the red onion.

3. Add 2 cups of water to pot and deglaze the pot. Add bay leaf, brown sugar, dry mustard, vinegar, Worcestershire sauce, and molasses. Turn off the Ninja Foodi.

4. Rinse beans thoroughly and drain. Add beans to Ninja Foodi. Start Ninja Foodi on slow cook mode; set to high for 5 hours.

5. Add remaining water. The beans should be even with the water level. If needed, add additional water.

6. Check and stir the beans every hour. The beans will be done when beans are tender and thick. Add salt to taste.
